Rhubarb season is HERE! It snuck up on me, I must admit. I have been so busy with other drama in our lives, I barely noticed the big pink and green patch growing ever larger in the lower garden. I pulled and chopped enough stalks to fill three gallon sized freezer bags for the chest freezer, and whipped up some smoothies for the kids.

One flavor combo I actually like is rhubarb and mint. You rarely need to buy mint. If just one person has made the mistake of planting just one spearmint plant in their yard with a mile of your house, you likely have some spearmint in your yard unless you spray for weeds. spearmint is a pretty aggressive plant that can ruin many a lawn. I don’t really mind it. For one, we can pick it and eat it. Two, when you run it over with the lawn mower, the whole yard smells like mint gum. There could be worse invasives in your yard.

Strawberry Rhubarb Spearmint Smoothie

  • 2 sticks rhubarb (about 8 inches each)
  • 3 medium sized fresh strawberries
  • 3 oz plain Greek yogurt
  • 4 oz milk
  • 3 fresh spearmint leaves

Finely chop the rhubarb, otherwise you will have some strings through out your smoothie making it not so smoooooooth. Everything else can go in whole, including the strawberry greens. If your yogurt is watery, you could skip the milk in theory. Although I never see real Greek yogurt that is very thin due to the straining. Using a pitcher blender or immersion blender, whip your ingredients until smooth.

No need for extra sugar, just enjoy the fruit and mint! Don’t forget a fat straw.

I like this combo since we have rhubarb, strawberries, and mint all growing in the same section of our garden. It makes for a really easy ingredient harvest. Get blending!
