It is time. Time to clean up your grill and get ready for the Summer grilling season. Those of you living far enough South always have grilling season. Us Northerners are not so lucky. sometimes you just don’t want to shovel the grill out of a snow bank and sit in subzero temps tending to it.

The prep for grilled pork spare ribs can be simple or complicated depending on what you like.  Many people relegate them to a complicated weekend meal, but they don’t need to be.

These ribs take me 15 minutes of prep and only an hour of active cook time.

Country Style Pork Ribs (Grilled)

Ingredients:

  • Country style bone-in or boneless pork ribs
  • Dry Seasoning rub
  • Favorite BBQ sauce

Trim meat to desired fat. Rinse in sink and pat dry with paper towels. Massage your favorite seasoning blend into your spare ribs. We use Penzey’s Cajun seasoning blend,  but your preferred dry rub is the best. Place uncovered in fridge for 2+ hours. You could do this the night before even if you like. Or in the morning before work. The only extra step I would add is if you like the meat to be fall-apart-soft. Then I would soak them in an apple cider vinegar based marinade for a day beforehand.  I personally do not bother.

Pull ribs out of fridge 60 minutes before grilling so they can warm to room temperature. If using a propane grill, turn up to high heat. Sear each rib for three minutes each side to seal them. Once all are seared,  turn grill to medium-low (about 300ºF) and close lid allowing ribs to cook 30 minutes.

Open grill and baste ribs on top side with your favorite barbecue sauce.  Continue grilling for 10 minutes (with closed lid) flip and baste other side to also grill 10 minutes to caramelize.

Your cook time may only be an hour, but it will taste much more like slow cooked! I should add that if you use bone0in you might want to add about five minutes of cook time to the 30 minute portion.

We served our ribs with homemade coleslaw, since anything else is just too rich with fatty spare ribs. In fact I skip the sugar in the coleslaw dressing and add more vinegar.

The great thing about cooking and grilling at home is you can tweak it to your specifications.  You can easily make your own low carb or paleo spice blends and sauce.
