“Mom, I’m still hungry. Mom, I’m still hungry……Mom, I’m still hungry…..!!!!”

I hear this phrase ALL.DAY.LONG. Mostly from my son. It might be a growth spurt, or it might just be that he is bored. I am not really sure. His favorite snack is Greek yogurt with fruit,but that is probably because it the main “junk food” I let him have. Since it is the Summer of Pudding, we have branched out. July 15th is National Tapioca Pudding Day. Yes, apparently that is a thing! My husband and I were discussing how much we hated tapioca pudding as kids. All we could remember was a pile of starch balls with a hint of pudding around them. (I suspect my father in law made the husband the tapioca pudding from scratch, and if it is anywhere near as awful as his rice pudding, I understand my husband’s aversion.) Anyway, Kozyshack makes a nice tapioca pudding that is free of gluten, corn syrup, and is made of very few ingredients. I decided our Summer of Pudding Patio Picnic should involve parfaits to use up the abundance of berries in our fridge.

On a related note, I think the mystery raspberry bush in our backyard is in fact a boysenberry bush! This new house is full of surprises.

Tapioca & Fresh Berry Parfait Cups

  • 2 cups Kozy Shack tapioca pudding
  • 1 cup fresh strawberries sliced, or fresh raspberries/blackberries

Makes two.

Use a dessert dish or even a margarita or martini glass for a decadent looking arrangement, despite it being super easy! Place a few berries in the bottom of the glass. Then layer a couple spoonfuls of tapioca pudding. Repeat layers until serving glass is filled slightly above the rim. Top with fresh berries and perhaps a a few mint leaves. Tapioca is great with any kind of fruit since it has a very neutral flavor.

So, the kids love tapioca pudding, and I am a fan simply because it is so thick that it takes them a long time to eat it. So I get to hear fewer of the “Mom, I’m still hungry” choruses. The bonus comes from Kozyshack tapioca pudding being really good. It is thick, with fewer starch balls, and sweet, but not too sugary. plus, it fits into the parameters of gluten free snacks for my son, and that is no small feat.
